Baked Butter Beans with Spinach


Ingredients

500 gr / 17.5 oz butter beans

500 gr / 17.5 oz spinach

1 cup olive oil

500 / 17.5 oz gr tomatoes

½ cup mint

½ cup green onions

½ cup dill

½ cup parsley

250 gr / 9 oz feta cheese


Instructions

Wash the butter beans and put them in a bowl with water for 12 hours so that they soften.

Put them in a pot with water and cook them for 1.5 hours in a low temperature (120 – 150 °C/ 250 - 300 °F)

When they are almost ready drain the water and put the beans in a greased pan.

In a bowl, mix all the other ingredients aside from the tomatoes and put them on top of the beans.

Grate the tomatoes and put them on top of the beans and spinach.

Do NOT add any water.

Bake them in a preheated oven at 190 °C / 375 °F for about 45 – 60 minutes (depending on your oven).
