Ingredients
Green Olives
Water
White Vinegar
Salt
Tartaric acid
Olive oil
Oregano
Container(s)
Instructions
Wash the olives and put them in a bowl with vinegar. In a liter of water put 2 tbsp of white vinegar. This is done because the vinegar kills any parasites that are in the olives.
After half an hour drain the water.
In the container you have chosen to preserve them, put salt, Tartaric acid and fill it with olives. Then, fill the container with water (at room temperature) and at the very top put olive oil.
Close the lid well so that air won’t get inside. The olives can be preserved like this for almost a year.
For 1 liter of water you need 90 gr / 3 oz of salt and ½ tbsp of Tartaric acid.
The olives will be ready for consumption after 30 days.
After 30 days take out of the container the olives you want to consume.
Wash them and cut them at 4 -5 places vertically. After all are cut we put them in a bowl with warm water for half an hour. Then we drain them and add salt, oregano and olive oil and close the lid.
After 24 hours they are ready.
